Sabudana Vada:

A favorite from Maharashtra, you must try the Sabudana Vada or the deep fried Sago Patties. It is a unique combination of potatoes and Sago pearls which are deep fried to prepare this crisp, indulgent snack. They are served best with the green coconut-coriander chutney. Make sure you wash the Sabudana at least 2-3 times before combining it with the rest of the ingredients.

Fish in Fiddle Head Fern:

In Assam, herbs and greens which usually grow in the wild and make their way to the kitchen. They add an interesting seasonal touch to the mundane meals. The fiddle head fern, called Dhekia Xaak in Assamese, is a staple in the hills during the months. It is cooked in mustard oil and is at times added to fish curries along with chunks of pork fat and elephant apples. An alternate way is to fill fresh trout with the fiddle head fern and roast it in the oven. The Bengali style of cooking this fern includes tempering it with nigella seeds, turmeric, and red chilli powder.

Palak samosa with Mozzarella:

This is the regular samosa with a twist. All you need to do is add pureed spinach to the samosa dough and use mozzarella cheese as stuffing. This gives the samosa a brand new avatar. Instead of the spicy potato filling, you have cheese melting in your mouth as you bite into the crisp covering.

Rajma Pakoras:

And, if it’s healthy snacking you have been waiting for, it’s time to try these Rajma Pakoras! Boil the rajma, mix it with herbs and spices, and coat it with oats and breadcrumbs, before shallow frying it in very little oil.

Kakrol Pur:

Another delicious snack is the spiky teasel gourd stuffed with spicy minced prawns or fresh grated coconut. This dish is from Bengal where teasel gourd is known as Kakrol which also makes for crisp fritters. It is a good idea to add nigella seeds to the oil before frying the kakrol pieces on low flame. When done, place them on absorbent paper and serve hot.
